Serving up a Christmas meal for relatives and friends can be daunting, but what if you had to cook for 30,000?

It’s a challenge Café Nero co-founder Antonio Motisi knows well. He’s on the board of Bon Appetit, a UK construction site catering specialist who fed the workforce on the London Olympic stadium build.
